Often found Bordeaux or Bordeaux-style blends from other regions of the world, Cabernet Franc is used primarily as a blending grape, Cabernet Sauvignon and Merlot. He is one of the parents of Cabernet Sauvignon grapes (Sauvignon Blanc being the others) and is lighter in style. By region, it is grown, it can have a peppery flavor with knots of tobacco, raspberry, cassis and coffee. There are few areas of the world where it is transformed 100% in a wine grape, the oldest being the Loire Valley in France and especially recently in the United States in Washington, California, and even Carolina North.
I have personally always been a fan of Cabernet Franc, but it may be difficult for a grape other to wrap my head around. One of the wines that I turned on 100% Cabernet Franc was Cougar Crest Cabernet Franc Walla Walla, Washington.
The year 2006 was one vintages better. Founded in 2001, Cougar Crest is a small wine cellar in one of the smallest wine regions in Washington – Walla Walla. Owners Deborah and David Hansen has been for years the grape of the appellation and sell them to other wineries in the region. Moving into the wine, they created a winery and tasting room near the airport and Walla Walla produced the first 900 cases year.
In 2006, Cabernet Franc displays ripe fruit at the first opening with black cherry, chocolate, tobacco and coffee. The wine develops that the air is exposed and shows different flavors and aromas throughout the night. The tannins are effectively through further down the line because it begins to show more pepper, dried currant, herb, and mocha with a silky, smooth as the finish. It is the ideal wine to pair with heavier dishes … steak or even heavy traditional Italian cuisine.
